Why does the trick work?

Call the middle number m. Then your three consecutive numbers are m−1, m, m+1.

Their sum is (m−1) + m + (m+1) = 3m. Now divide by the middle number m:

3m ÷ m = 3.

This only fails if m = 0, because dividing by zero is undefined.
